So, here it is. The crucial month for wine making. I have been lucky enough to witness a vintage. This was in Beaujolais. The wine maker basically has 2 weeks of stress. Should we pick there today, or tomorrow, how’s the weather doing? The complex results of soil, climate, grape variety, pruning etc. come together and basically form the possibilities. Then the various winery techniques can start. Type of fermentation, barrel use or not, temperature control. Then there’s the blending and the ageing. So, it really is a long process of decisions, method and luck. Think of these men and women – sleeping two hours a night during the picking and early fermentation process. Think of the complex science of wine – much still not understood. And then think of the never ending journey of new tastes and the joy of the wine, food and company. Not bad eh?
